Slow Cooker Pig's Trotters
This Chinese pork stew is cheap to make and tastes fab. Pig's trotters are boiled, then cooked in a slow cooker with soya beans and aromatic seasonings. Enjoy alongside rice, if desired.

Ingredients
Makes: 2- 4 servings
- 1kg pig's trotters
- 250g dried soya beans, rinsed and soaked for 12 hours
- 3 tablespoons rice wine
- 1 (5cm) stick cinnamon
- 2 pods whole star anise
- 100g rock sugar
- 3 tablespoons dark soy sauce
- 1 litre water
- 2 teaspoons salt
Method

- Wash the pig's trotters, plug off any hair and chop them into 6cm chunks. Put into a big pot and cover with water. Bring to the boil and drain.
- Bring a large pot of water to the boil over high heat. Add the soya beans and pig's trotters, bring back to the boil.
- Transfer all these ingredients into a slow cooker. Add the soy sauce, salt, rice wine, cinnamon stick and star anise pods and stir well.
- Cook for about 3 hours or until the soya beans and trotter's skin becomes very soft. Add the rock sugar and cook until it dissolves.
- Ladle everything into a big bowl and serve.
Ingredients
Pig's trotters can be purchased at your local butchers. You may need to place a special order for them.
Rice wine and rock sugar can be purchased in Chinese/Oriental speciality shops.
